Prosciutto Burrata Avocado Panini
As promised, here is my favorite new quarantine lunch: the prosciutto burrata avocado panini. Lately I’ve been very into sourdough bread and after scrolling through some old pictures from our Italy trip last year I was reminiscing over all of the delicious sandwiches we had there. I decided to spruce up our typical random clean out the fridge lunches that we’ve been eating and really create something delicious. Plus, I think Joe has had maybe 100+ turkey and cheese sandwiches since started working from home.
To make these sandwiches it is shockingly easy and incredibly delicious, the perfect combination. Obviously if you have a panini press it is even simpler, but, given that we do not have one, I used our skillet and it still turned out delicious. Prosciutto Burrata Avocado Panini
Ingredients
- Prosciutto (4 pieces)
- Burrata cheese (1/2 cup)
- Spinach (1/2 cup)
- Avocado (1/2)
- Sourdough bread (4 slices)
- Olive oil (1 tablespoon)
- Balsamic vinegar (2 teaspoons)
Instructions
- On a hot skillet, add 1 tablespoon of olive oil
- Mash the avocado on to two slices of the bread
- Put the pieces of bread with the mashed avocado on the skillet
- Add the burrata on top of the avocado and then top with the prosciutto and the spinach
- Place the other pieces of bread on top
- Once the bottom piece of bread is crisped (~5 minutes on the skillet), flip the sandwich to crisp the other piece of bread
- If desired, place another skillet on top of the sandwiches to press down the bottom piece of bread
- Once the new bottom piece of bread is crisped (~5 minutes), remove the sandwich from the skillet and place on a cutting board
- Slice in half and serve alongside some chips and enjoy!
