Veggie and Meat Sauce
An absolute staple in this household and something I make almost every week. Whether we’re enjoying immediately over pasta with cheese or allowing to get to room temp and then storing in our fridge/freezer, this sauce is constantly being made. Packed with flavor and loaded with some veggies to sneak them in, especially for my son.

Ingredients
- Mushrooms (1 pack)
- Bell pepper (1)
- Ground beef (1lb)
- Minced garlic (2tbsp)
- Crushed tomatoes (1 24oz can)
- Tomato paste (1tbsp)
- Olive oil
- Salt
- Pepper
- Red pepper flakes
Instructions
- Cut the bell pepper and mushrooms into small 1/2 inch pieces
- Add olive oil to the skillet and, once hot, add in the minced garlic
- Stir for ~1 minute or until fragrant
- Add the ground beef to the skillet and season with salt, pepper, and red pepper flakes
- Allow to cook on one side for ~5 minutes and then crumble into smaller pieces using a wooden spoon
- Add in the vegetables
- Mix and cover to cook for ~10 minutes
- Add in the crushed tomatoes and 1tbsp tomato paste
- Mix and allow to cook, covered, on low for ~30 minutes
- Either add to pasta or allow to get to room temperature and store in containers in the fridge and/or freezer
- (If adding to pasta, make the pasta, remove 1/4 cup of the pasta water, then strain, and add the sauce and pasta water back into the pot to fully coat)
