Cinnamon Almond Granola
I am a granola addict; there is no getting around it. I consume it in all ways: mixed in with yogurt, the perfect crunchy topping to chia pudding, and, of course, by the fistful. However, there is no way I enjoy more than a big old bowl of granola with some nut milk – cereal style. Whenever I receive my Sakara meals (use code XOCAMERON for 20% off your first order), I am always ecstatic to find a version of granola/nut milk breakfast combination. Recently, Joe and I decided to split one of these combinations (a coconut praline granola and a dark chocolate mylk) for dessert, and I’ve never seen the kid so pleased and in love with a healthy dish in my life. Right then, I knew I was going to have to recreate this combo ASAP. This new snack, breakfast, and dessert option is now a large part of my routine.
Ingredients:
Dry Ingredients:
Almonds (1/2 cup)
Rolled oats (2 cups)
Steel cut oats (1/2 cup)
Almond flour (1/4 cup)
Shredded coconut (1/2 cup)
Coconut flakes/chips (1/2 cup)
Hemp seeds (1/4 cup)
Cinnamon (2 teaspoons)
Salt (1/2 teaspoon)
Nutmeg (1 teaspoon)
Wet Ingredients:
Maple syrup (1/4 cup)
Coconut oil (1/4 cup) – melted and cooled
Directions:
Slice the almonds into small pieces
In a large bowl, combine all of the dry ingredients
In a smaller bowl, combine the wet ingredients
Pour the wet ingredients into the large bowl and combine well with a spoon
On a parchment lined baking sheet, spread out the mixture
Place the baking sheet in the oven at 350 degrees for 15 minutes
Remove from the oven, break into pieces, and store in an air-tight jar

For the dark chocolate almond mylk:
Ingredients:
Almonds (1 cup)
Filtered water (8 cups)
Cacao powder (1 teaspoon)
Cinnamon (1/2 teaspoon)
Dates (3)
Directions:
Place the dates in a warm cup of water and allow to sit for 5 minutes
Remove the pits and stems of the dates and chop into smaller pieces
Place all of the ingredients in a blender and blend on high until it is a smooth consistency
Place the mixture through a nut milk bag and place the liquid in a bottle in the refrigerator until ready to enjoy
