Strawberry and Banana Overnight Oats

Strawberry and banana go together like Britney Spears and Justin Timberlake. At one point in everyone’s childhood, this was their favorite combination, but overtime, we have all slowly put it on the back burner and forgot about it while moving on to bigger and better things, such as banana and peanut butter (the Beyonce and Jay Z). But, hold the phone. Let’s rewind and revisit this childhood love affair. Because we all may have moved on and all, but it is still incredibly delicious and worth talking about again. Try this recipe out, sit back, and take a trip back to the 90s while enjoying your breakfast.  (And if this is what it takes for Britney and JT to get back together than I will eat this breakfast every god damn day).

Ingredients (makes 1 serving):

  • Steel cut oats (¼ cup)

  • Rolled oats (¼ cup)

  • Skim milk (¼ cup)

  • Kefir (¼ cup)

  • Strawberries (1 cup)

  • Banana (¾)

  • Chia seeds (2 spoonful)

  • Coconut oil (1 spoonful)

Directions:

  1. Prepare your strawberry chia jam:

    1. Chop up your strawberries and place in a pot with the spoonful of coconut oil

    2. Cover the pot and cook on high until the strawberries begin to release their juices and mix with the coconut oil

    3. Use a hand potato masher or the back of a wooden spoon to soften and break up the strawberries

    4. Lower to a simmer and continue to cook covered

    5. Once this mixture reaches a jam like consistency, allow to cool and mix in the 2 spoonful of chia seeds

  2. In a bowl, combine the dry ingredients: steel cut oats and rolled oats

  3. In a bowl, combine the wet ingredients with the banana: mash ½ of the banana and mix with the skim milk and the kefir and stir until well combined

  4. Combine the bowl of wet and dry ingredients

  5. Mix in the strawberry chia jam

  6. Top with the remainder of the banana

  7. Allow the oats to soak overnight and enjoy the next morning or up to 4 days later.
